Flavor, Ingredient, and Nutraceuticals

Specific Expertise:

FlavorSense's expertise involves novel ingredient development and product development:

  • Extraction/concentration of bioactives and flavors from botanicals and co-products
  • Drying of bioactives and flavors (expert conductance drying, as well as spray drying, freeze drying, IR drying, and combinations thereof)
  • Understanding and creating the value proposition for new ingredients
  • Assisting companies in creating zero waste processing
  • Shared processing using conductance drying


FlavorSense is led by Leslie Norris, flavor chemist, with over 20 years’ experience in flavor and product development. Leslie began her career with McCormick and Co., where she completed a seven‐year apprenticeship program under a master flavorist. Leslie was then recruited by Ernest & Julio Gallo Winery to develop their flavor research laboratory. As their Director of Flavor and Sensory Sciences, she researched the chemistry, flavor, and sensory aspects of wine. She then worked for Solazyme Roquette Nutritionals, where she co‐invented remarkable microalgae fat and protein products. She received a BS in chemistry from Goucher College and an MA in food science and technology from the University of Maryland.

We have been optimizing conductance drying technology over the past 5 years. Since building an R&D conductance dryer in 2011, we’ve worked to make the technology efficient and scalable, reduce the equipment capital cost, and to make cost effective and authentic flavors and ingredients. Working with our New Zealand sister company, we have created a modular dryer that can expand with production, and is affordable, easy to run, and easy to maintain. Our goal is to partner with the growers/owners of raw materials and co-products. Although the drying technology can dry traditional compounded flavors, FlavorSense leads the charge in the creation of novel dried flavors made with traceable agricultural-based ingredients from the named source. These types of flavors are marketed as “Whole Flavors™” and “Whole Ingredients™.”
